One of the most important functions your body performs is maintaining the proper acid and alkaline levels in various systems. This is measured by pH. A pH of 0 is pure acid, 7 is neutral, and 14 is pure alkaline. Your blood pH must to stay within the narrow range of 7.35-7.45, which is slightly alkaline. The stomach, on the acid side of the scale, has a pH of 2 through the secretion of hydrochloric acid for digesting food. Simply stated, your body converts an acidic liquid of dissolved food called chyme into an alkaline pH blood system which carries oxygen and nutrients throughout your body.
When this process is hindered or disrupted because of nutritional deficiency, you are prone to fatigue and illness. Major minerals that provide alkalinization in the body are calcium, magnesium, sodium, and potassium.. These must be provided in your diet on a daily basis for maintaining the proper pH of your blood.

Taking a look at the pH chart to the right. You will notice that lemon, orange, tomato, and black coffee are acidic, being below a 7 pH. Be cautious when you see charts saying any of these, like the lemon, are alkaline. All acidic foods are buffered in the body, so you may run low on alkaline reserves while consuming too many acidic foods. Enjoy acidic foods in moderation to maintain consistent alkalinity.
You might be wondering where the buffering mineral reserves are coming from? A dentist will acknowledge that teeth dissolve easily in soda drinkers because of phosphoric acid. Bones contain the calcium which buffers high acidity. Non-acidic foods, like green leafy vegetables, do not quickly draw down alkaline reserves, but increase them.
When you have sufficient nutritional reserves, your body will naturally produce an abundance of energy. It is only when your reserves become depleted that you might feel the need to rely on stimulants.
Are Stimulants Healthy in the Long Run?
If you are using caffeine or other stimulants for energy production, instead of relying on natural energy production, eventually you might end up feeling burnt out. You might feel the need to consume more stimulants, tapping deeper into tissue reserves. The higher the dosage of stimulants, the deeper the body will tap into its reserves, which contributes to premature aging. When muscles become depleted they become tight and sore. When bones become depleted they become porous and weaken. When nerves become depleted it may lead to anxiety or depression.

Can I Monitor pH Level?
To monitor saliva pH, simply purchase pH test paper through our Store and test your saliva pH first thing in the morning. Take readings before eating because eating changes your base line reading. Monitor your pH periodically throughout the week and chart your improvement. Feel the difference in your energy level when the base line saliva pH raises from a number close to 6 to a number close to 7.
Another method of monitoring alkaline reserves, is monitoring saliva pH as you start eating. As saliva flows to digest your meal it contains an enzyme called amylase which is an alkaline enzyme. Amylase is the enzyme which digests carbohydrates. If the pH test strip does not turn blue (alkaline) then you might not be manufacturing sufficient enzymes for digesting carbohydrates, and this may signal a depletion of alkaline minerals.
Amylase deficiency is not to be confused with gluten intolerance. Gluten is a protein in a few grains like wheat. Protease is an enzyme which digests gluten.
